Aloha guys, I live and grew up in Hawaii and do a lot of fishing and cooking. I might have a recipe that could help the jack crevalle taste better, I havenβt eaten that particular jack species but we cook a lot of giant trevally here in Hawaii and it taste pretty good and mild fishy taste. But I cook it with a Asian inspired recipe, Iβll try me best to explain. First off the ingredients are 2-3 eggs, panko bread crumbs, 1 sweet round onion, for the sauce you will need 2 cups of mayo, 1 table spoon of unagi sauce, 1/4 cup of kikoman say sauce, 1/4cup of mirin, you may have to add more of any of the wet ingredients to tweak the sauce for your liking. Ok so, I cut the fish up into 3 inch pieces at a angle, mix the eggs up and coat fish in the egg wash then into bread crumbs then fry till golden brown. I usually use the fish in a salad and use the sauce as a dressing it taste really good. I also add the onion in the salad because of I love onions but itβs not needed. This is a really good recipe but I hope you guys can find the dressing ingredients since it is Asian and your in the keys.
Years ago Inwas fishing with an outfitter out of Marathon , Fla . We took two boats out caught over 300 fish many many Blue Runners . Our Outfitter told us they were not fit to eat . So we threw them back in the drink . We caught several outer species that were cooked up that night .
Interesting video. When I was young I did not like fish the way my parents prepared it until we started smoking fish. Jacks as well as Blue fish were very strong fishy taste. Once we started smoking them they tasted better. I remember this couple from Ormond Beach used to come up to Flagler Beach. The husband would not eat any fish unless it was skinned and deboned. Years later my mother noticed I loved the fish served at one restaurant and she asked me what was different from hers. It was skinless and boneless and not sign of bloodlines. All the cooking programs I have watched remove the blood line (Including on Tuna). Please note if you are hungry enough you can eat anything or try other methods of preparation. Great job presenting saltwater species from way south Florida. Keep up the great job and keep living your dreams.

You should try to make Jack fish jerky. Smoke just like you would elk or deer.
The top part of a jack carvelle is a poor man's tuna.bottom part is good fish bait strips

I bet you take that Jack fish marinated in liquid smoke,sesame oil,lime juice,little brown sugar and smoke it then put in food processor make it into a dip with that mayo sauce you made and cream cheese,fine chopped green onions that fish has the right texture to make a smoked fish dip
