  1. John says:

He left out two very important but basic things.

    1) a sharp knife is safer to use than a dull knife. Dull knifes slip on the food and that is when someone gets cut. If you don't know how to sharpen a knife then call you local market and ask the meat manager if he will sharpen it for you. Most good markets will. Also, when slicing or chopping anything that is round like a zucchini or a potato, you can slice a small flat spot or cut it in half to give yourself a stable surface to lay on your cutting board flat side down so it doesn't want to roll around on you.

    2) when seasoning you can always add more but you can't take it out. Start with less salt or whatever seasoning you are using and then add more once you taste it.

    3) (I know I said 2 but this one is not so basic) smoke points of oil. So different oils have what are called smoke points. this is the temp that an oil start to break down quickly and starts to smoke. As an example olive oils can have a smoke point of around 325 degree (F) but a canola oil smoke point is around 400 (F). I like to use a lite drizzle of olive oil at the very end like a seasoning and not for cooking so much. An oil that is giving off smoke is turning bitter because it is breaking down and will not help a food NOT stick anymore.
