Without reading all the comments, as I would assume someone would have pointed this out… the knot you tied at the start was a Clinch Knot. The Improved Clinch Knot takes the tag back through the loop formed along the standing line after the tag got through the first loop.
I've tied the Improved Clinch for years while fishing for fresh water trout on 5x & 6x tippet (3 -5 # test). I've never surf fished, but will this summer.
I make a line loop at the swivel before I wrap then pull the tag end through the loop. The tight loop holds the tag end from pulling the knot apart under more pressure. A 500lb shark on 80lb line could pull the knot apart. Or trying to stop a 35lb striped bass on 10pb test before the spool runs out.
Please check yalls local regulations because if your fish is considered undersized in your area you need to throw it back and not use it for bait. ALSO if your just watching this and new to fishing DO NOT handle Sting rays like this gentleman did. Always secure the tail while being wary of the barb. If you don't the tail will whip around and the barb may stick you. Use pliers or a grip to secure the tail.
I prefer using a clip on my main line so it's easy and quick to change rigs rather than have to tie cut and tie each time. I still use the improved clinch tho very reliable

I saw a video where they were beach fishing in NJ Shore in the fall/winter with hats and they caught a skate and wore it and made a skate helmet!
Flatten the barbs is you want to fish like a real sportsman!

Pretty sure a size 1 hook would be larger than your 2, not smaller.
This is simple klinch knot. Improved klinch is when you also pull the line through 2nd loop forminf after 1st pull.
