What kind of controller are you using? Does it have vibration/haptic feedback? I've found that even with the Nintendo Pro Controller, there is a slight amount of input lag that delays the the pull-up of the fish. Fishing with joycons connected in handheld mode is always the most optimal setup for me. The firmness of the buttons also prevents 80% of nervous twitch accidental pulls.
