    That's the best way to clean a fish, very clean but what a waste, our culture here in the Philippines has a different way of cleaning it, just gut and scale it, cut to pieces, clean and cook everything including the head and internal organs.

    Andy is by far the best sturgeon filleter out there! He taught me everything and I'm proud to say I can cut a fillet pretty well it just may take me 5 to 10 times longer. GREAT job Andy as always!

    Good question!

    This is a juvenile sturgeon, below five feet in overall length. The fish that are 5+ feet in length are the adult spawners/breeders and they are the ones that have caviar. Fortunately we are not allowed to keep the adults and they are released. No caviar in any of the fish we keep.

    Yes, Cut it thin and cook it hot. It's easy to over cook. Deep frying it works well. Try a small piece for practice before trying to cook larger quantities. Cook and cover with your favorite sauce and it will be awesome … or you could just let them go and eat chicken. Tastes about the same.

    Caught hundreds of Sturgeon, never killed one, so no idea what they taste like, they are protected were i live so catch and release only, but fantastic job of filleting, you have skill
